Recipe
Makes 4 slushies in 15 minutes (+ 4 hours of pre-freezing time).
INGREDIENTS
1/2 cup non-frozen watermelon chopped into small chunks
5 cup frozen watermelon chopped into small chunks
1/4 cup raw coconut water
1/4 cup fresh lime juice, about 1-2 whole limes juiced
1 tablespoon raw honey
Garnish: lime wheels, watermelon triangles, springs of mint
METHOD
Chop watermelon into small pieces. Add 1/2 cup to a container and put in refrigerator, not to be frozen. Add the rest to a freezer bag, and lay flat in the freezer for at least 4 hours until frozen.
Once watermelon is frozen, make a 1/4 cup of fresh lime juice (1-2 limes juiced). Tip: before juicing, firmly roll the lime around the counter with your hand to release its juice.
Add the honey, lime juice, and coconut water together, and mix.
Time to blend. Using a high powered blender like a Vitamix is recommended. Add the non-frozen watermelon first to the blender, which makes it easier to blend. Then add the frozen watermelon to the blender. (The smaller the pieces the easier to blend.)
Next, add the coconut water, lime, honey mixture and blend.
When it's well blended and has a slushy texture, it’s ready. Time will vary depending on your blender.
Pour slushy mixture directly into clear cups and garnish each drink with one lime wheel, a watermelon triangle, and a sprig of mint. If you have mini watermelons, you can use these scooped out for cups too! Just make sure to cut the bottom a bit so it lays flat.
Use a spoon, or wide straw to enjoy!
